Black Garlic Cloves
Black Garlic is a type of aged garlic. Fermented in a controlled environment for an extended period of time. That process produces a black/purplish brown clove that is used for a variety of elevated culinary applications.
In this fermenting process the pungency of fresh garlic is softened to near nonexistence. The process gives way to a heightened umami caramel, tamarind flavor profile. The higher natural sugar content in the organic California garlic that I use to create my black garlic brings out the softer/ less acidic side of the finished product.
I package this deliciousness in a 2 ounce aluminum tin that can be reused.
Store in the refrigerator after opening.
Ideal uses: Crush a clove and spread it on bread, crush it with butter, use it with cheese, chocolate or red wine. Crush it and add it to a pat of butter on top of a grilled steak or burger. Smashed it can be added to slow cooker recipes, chili, stew or stir-fry. Crush it and add it to vinegar or mayonnaise to make a paste for marinades.
